recettes de BBQ !!

I just did Ribs this weekend for my Birthday Supper.

I rubbed the ribs 24 hours in advance

I placed them on my smoker

I smoked them for 4 hours at an average of 220 degree until the bone would twist off the meat

Then at the very end I threw them on the BBQ and slathered them with BBQ Sauce

(I don`t like saucing in my smoker because it gets the bottom all dirty!)

I used Hickery wood chips that were soaked in water.

As for some people said they had trouble with the membrane on the ribs... Start with the back end of a spoon to get between the meat and membrane! Once you have a bit loose, just pull on it with your hand and it will rib right off!*tu*
 
t'as juste un rack dedans sur pattes et tu mets ton bois dans un bac en alu selon ce que j'ai vu
pas de trappe d'air ou de cheminee ?

I have 2 racks in it. One ontop of another.

I put my briquette coals on the bottom and sit my wood chips ontop of it.

I have no chimney on it, but there is an air trap at the bottom to keep the briquettes light!

Yes it is. But it has been cleaned, stripped and sandblasted to remove the protective coating.

Plus, it does not get hot enough in there, that if there were some residue of the coating that it would harm anything.

I would not suggest doing a smoker like i have with out removing the coating! Its important to mention!
 
À ma job j'ai gagné un esti de beau BBQ en stainless. Y'a une plaque pour saisir, un truc pour la rotisserie ( plaque chauffante comme au Amir )....un BBQ pour faire mouiller les voisines.

Finalement je m'en sers à peu près juste pour faire des patates au four, des saucisses et bouillir de l'eau. Pour le restant ça va encore sur mon vieux charcoal rouillé avec de la bonne braise de bois fraichement buché de ma backyard de banlieue. Criss c'est bon du charcoal avec un bon gout de cancer.
 
PS. Pour ceux qui veulent donner un gout de boucane vous avez juste à acheter de la chip à fumoir, y'a ça au canadian tire, un peu toutes les sortes dépendamment du moment, érable, pomme, hickory etc.
