Searching for the best tartar in town? (red meat)

Any beef/bison tartar fans here?

I've already been to a few places.

- Marché 27
- l'assomoir
- Grinder

Next on the list is Méchant Boeuf.

Any suggestions

Inb4 homemade is the best, I "cook" tartar once every two week or so, but we enjoy going out with friends to try new places
 
I love homemade tartar, not sure I'd have tartar in a restaurant. Not that it makes a difference in how the meat is handled BEFORE the chef gets his hands on it, but I have my own Italian tartar recipe:

I grind the meat, then add concentrated lemon juice, salt, plenty of HIGH QUALITY black pepper along with a bit of montreal steak spices
which I can get fresh from the factory because Cookie, then some olive oil and mix.

Let it rest for about an hour or so, allow the meat to "turn" slightly gray from the lemon juice then drain it and serve.

Optionally add some minced onions.

Enjoy with a glass of sturdy red wine.

I had some really good horse tartar at Grumman '78, however they change the menu daily depending on what fresh products they get (just like Joe Beef and the likes...)
 
Pour ceux qui en font maison, au lieu de prendre du filet mignon essayez-le avec de la bavette! Vraiment bon avec des pickles hachés et autres choses que j'ai oublié
